This luxurious Cabernet Sauvignon offers aromas of blackberry, raspberry compote, plum and warm winter spices, as well as hints of lavender. The dark fruit layers are echoed on the palate, where they mingle with notes of dark chocolate, coffee, and star anise, with plush, velvety tannins carrying the wine to a long, rich finish.
The 2019 growing season in Paso Robles was defined by mild weather and outstanding quality. A cool winter and a mild spring delayed budbreak, with rains during bloom reducing the size of the 2019 crop. Overall, summer was temperate and even, with fewer-than-normal heat spells, allowing for more hangtime, and the development of great color and optimal sugar/acid balance in the grapes. Harvest for our Paso Robles Cabernet Sauvignon began in the first week of October. Ideal mild weather throughout harvest allowed us to pick each block exactly when we wished, ensuring optimal ripeness and flavor development.
